Over the past decade, “fast casual” has been the fastest-growing segment of the restaurant industry. By hitting consumer trends head on — such as demand for healthier menu offerings and more upscale décor — fast casual brands now account for more than $23.5 billion of the $200 billion restaurant industry.  

That strong growth is expected to continue. Technomic, an industry research firm, predicts the fast casual segment will post compound annual growth of 8% through 2015. By comparison, a U.S Census report predicts the restaurant industry as a whole will grow only 3% annually through 2016.
